3 eggs (or 3 T ground flax seed + 6 T hot water)
2 C flour
1 1/2 C sugar
1 t vanilla
1 t salt
1/3 C oil
2/3 C applesauce
1 T cinnamon
1 t baking soda
1/2 t baking powder
1/2 C nuts
Combine zucchini, eggs, oil, sugar, and vanilla. Blend.
Add dry ingredients. Fold in
nuts. Bake in lightly greased floured
loaf pans 40 min
