General conference cinnamon rolls

 60-minute Cinnamon Rolls         Holly Wonnacott

2 1/3 C warm water

1/3 C sugar

2/3 C oil

4 T yeast


Mix ‘til combined. Let rest 15 minutes. (Use a timer;

The timing must be exact or they don’t turn out as well.)


2 t salt

2 eggs

7 C flour (1/2 wheat is okay)


Add. Mix. Knead, adding flour if too sticky. Let rest 15 minutes.


Preheat oven to 375. Divide dough in half. Roll out for cinnamon rolls;

Spread softened butter over the rectangle of rolled-out dough, then sprinkle

cinnamon and sugar (½ C brown sugar + ¼ C sugar + 2 T cinnamon) over it. Roll up and cut with a piece of dental floss.

Let rise in pans 15 minutes. Bake 15 minutes. Top with glaze made of powdered sugar and milk.

 

For orange rolls use this filling instead of cinnamon and sugar:

Grated rind of one orange

½ C melted butter

1 ½ C sugar

Put this mixture in the fridge until it’s harder and easier to spread.


Cream Cheese Frosting

4 ounces brick-style cream cheese (at room temperature)

2 tablespoons unsalted butter (at room temperature)

1 ¼ cups confectioners' sugar (powdered sugar)

½ teaspoon vanilla extract

small pinch of salt

Raw brownies

  • 2 cups whole dates
  • 1 cup pecans
  • 2-3 tbsp cocoa
  • 2 tbsp pure maple syrup  
Simply blend the pecans in a food processor until they form a crumbly mixture, then add the dates and blend again before adding the cacao and maple syrup. Place the mixture into a baking tray and either refrigerate for three to four hours or freeze for one hour to allow them to set. Keep them in the fridge for freshness.
Can also be rolled in balls, then rolled in coconut, to look like truffles.  :)

Carrot Cake

3 C flour (whole wheat or white or half/half)
3/4 C oil (part water is okay, for lower fat)
3/4 C applesauce
up to 1 C nuts
2 tsp. soda
3 C grated carrots
2 C sugar
4 eggs
1 tsp. salt
2 tsp. cinnamon
1 C raisins
 
Mix all together, then bake:
1/2 hour at 350
1/2 hour at 300
 
Frosting:
1 pound powdered sugar
8 oz. cream cheese
1 cube butter (or use less butter, and add a little milk)
dash of vanilla

Lemon Bars

CRUST

  • 1 cup flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 tablespoons butter, softened
  • 2 tablespoons canola oil
  • 1 teaspoon freshly grated lemon zest

FILLING:
2 eggs
1 cup sugar
2 tablespoons all-purpose flour
1/2 teaspoon baking powder
2 tablespoons lemon juice
1 teaspoon grated lemon peel

Additional confectioners' sugar

Preheat oven to 350°F. Spray a 8" square pan. For crust: Stir flour, sugar and salt in a medium bowl. Stir in butter, oil and lemon zest until blended and crumbly. Press the dough in an even layer in the prepared baking pan. Bake the crust until firm to the touch, about 20 minutes.

For filling, in a small bowl, beat eggs. Add the sugar, flour, baking powder, lemon juice and peel; beat until frothy. Pour over the crust. Bake 25 minutes longer or until light golden brown. Cool on a wire rack. Dust with confectioners' sugar. Cut into bars.

Texas Sheet Cake

 Cooking spray
·                                 2 teaspoons all-purpose flour
·                                 2 cups all-purpose flour
·                                 2 cups granulated sugar
·                                 1 teaspoon baking soda
·                                 1 teaspoon ground cinnamon
·                                 1/4 teaspoon salt
·                                 3/4 cup water
·                                 1/2 cup butter or stick margarine
·                                 1/4 cup unsweetened cocoa
·                                 1/2 cup low-fat buttermilk
·                                 1 teaspoon vanilla extract
·                                 2 large eggs 
·                                 Icing:
·                                 6 tablespoons butter or stick margarine
·                                 1/3 cup fat-free milk 
·                                 1/4 cup unsweetened cocoa
·                                 3 cups powdered sugar
·                                 1/4 cup chopped pecans, toasted
·                                 2 teaspoons vanilla extract

 

P       Preheat oven to 375°.
2.                               To prepare the cake, coat a 15 x 10-inch jelly-roll pan with cooking spray, and dust with 2 teaspoons flour. Set prepared pan aside.
3.                               Lightly spoon flour into dry measuring cups; level with a knife. Combine 2 cups flour and next 4 ingredients (2 cups flour through salt) in a large bowl; stir well with a whisk. Combine water, 1/2 cup butter, and 1/4 cup cocoa in a small saucepan; bring to a boil, stirring frequently. Remove from heat; pour into flour mixture. Beat at medium speed of a mixer until well-blended. Add buttermilk, 1 teaspoon vanilla, and eggs; beat well. Pour batter into prepared pan; bake at 375° for 17 minutes or until a wooden pick inserted in center comes out clean. Place on a wire rack.
4.                               To prepare the icing, combine 6 tablespoons butter, milk, and 1/4 cup cocoa in a medium saucepan; bring to a boil, stirring constantly. Remove from heat, and gradually stir in powdered sugar, pecans, and 2 teaspoons vanilla. Spread over hot cake. Cool completely on wire rack.


Peanut Butter Chocolate Chip Cookie Dough Bites

(vegan and gluten-free)

 Preheat oven to 350F. Combine all the ingredients, except for the chocolate chips, in a food processor and process until very smooth.  Put in the chocolate chips and stir it if you can, or pulse it once or twice. The mixture will be very thick and sticky. With wet hands, form into 1" balls. Bake for about 10 minutes.

Chocolate waffles with strawberry sauce

Strawberry Waffle Sauce

2 cup Strawberries (loosely packed; fresh or frozen)
1/8 cup white sugar
1 teaspoon cornstarch (disolved in a little water)

Instructions: 
1. Cut strawberries into halves or quarters (depending on preference; if the strawberries are fairly small you may leave them whole).
2. Place strawberries in a saucepan and pour sugar on top and place on burner set between medium and medium-low.
3. The mixture will slowly become watery at which point you can set the burner to medium. Once the mixture begins to boil add dissolved cornstarch while stirring the mixture.
4. After boiling for 1-2 minutes (remember to continue stirring) you can remove from the burner.
The syrup can be used hot or can be refrigerated and used cold, depending on your preference.


Double Chocolate Waffles with Berry Sauce

2/3 C flour
1/3 C corn starch
1/4 C unsweetened cocoa powder
1/2 t baking powder
1/2 t baking soda
1/4 t salt
1/8 t cinnamon
6 T granulated sugar
1 C milk
1/3 C vegetable oil
1 egg
1 1/2 t vanilla
1/2 C mini chocolate chips

Preheat a waffle iron.
Combine flour, cornstarch, cocoa powder, baking powder and soda, salt, and cinnamon. Use a whisk to combine.
In a separate bowl whisk together sugar, milk, oil, egg, and vanilla. Whisk for a minute so it gets a little frothy.
Slowly add the wet ingredients into the dry a little at a time, whisking to combine. Just stir until they’re combined and don’t overmix. Stir in the chocolate chips. This is a pretty thin batter, so don’t be expecting something that looks like a pancake batter. It’s supposed to be thin.
Lightly butter waffle iron. I have one with non-stick finish and I actually don’t grease mine at all. You may not need to. Place batter in and cook according to your iron.
A tip:
Instead of pouring batter, use a ladle and spoon it in, making sure to stir the batter each time. Otherwise the chocolate chips won’t be distributed.

It’s a little harder to tell when chocolate waffles are done because you can’t go so much on color. Go by smell and touch and realize that they will crisp up after they come off the iron.

Strawberry Topping
·                2 cups frozen, sliced strawberries (fresh works, too)
·                1/4 c. sugar
·                1/4 c. water
·                1 t. lemon juice
·                2 t. cornstarch (dissolved in a little water)

Combine strawberries, sugar and water in a small saucepan.  Bring to a slow boil, stirring occasionally until sugar is dissolved, mashing the strawberries as they cook.  Add lemon juice and cornstarch/water mix.  Stir until thickened.  Remove from heat.  Serve warm.

Low Fat Sugar Cookies

5 tbsp butter, softened
3/4 cup sugar
1 egg
1 tsp vanilla extract
1 2/3 cups all-purpose flour
1 tsp baking powder
1/4 tsp salt

Using a mixer, beat butter and sugar until creamy. Add egg and vanilla, mixing well. In another bowl, whisk together flour, baking powder and salt. Gradually stir flour mixture into butter and sugar until dough forms. Don't worry if the dough seems a little crumbly at first; it will come together. Wrap dough in plastic and chill for two hours in the refrigerator.

Preheat oven to 350 degrees. On a lightly floured surface, roll out dough to a 1/4-inch or 1/8-inch thickness. Use holiday cookie cutters dipped in flour to make cutouts. Gather scraps and re-roll until all the dough is used.

Place cookies 1 inch apart on a parchment-lined cookie sheet. Bake for 9-10 minutes or until the edges are lightly browned. Transfer to wire rack after 1 minute to cool.


Banana Crumb Muffins

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

3 bananas, mashed

3/4 cup white sugar

1 egg, lightly beaten

1/3 cup butter, melted  (or oil)

Topping:
1/3 cup packed brown sugar

2 tablespoons all-purpose flour

1/8 teaspoon ground cinnamon

1 tablespoon butter
  

Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.
In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.

Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

Peanut Butter and Chocolate Banana Bread

2 c all purpose flour

1 c sugar
1 TB baking powder
½ tsp salt
1 c mashed ripe banana (approx 2 med)
1/3 c milk
1/3 c peanut butter
3 tbs vegetable oil
1 egg
1 c choc chips

Preheat oven to 350° F. Spray bottom only of loaf pan with nonstick cooking spray. In the bowl of your stand mixer or in another large bowl if making by hand combine flour, sugar, baking powder, and salt. Add bananas, milk, peanut butter, oil and egg; stir until dry ingredients are moistened. Stir in ¾ cup of the milk chocolate morsels. Spoon batter into pan. Sprinkle remaining ¼ cup of milk chocolate morsels evenly over batter.

Bake 60 minutes or until cake tester inserted in center comes out clean. Watch and check the last ten minutes because oven temperatures vary and you do not want to overcook it! Cool in pan 10 minutes. Loosen sides of loaf from pan; remove loaf to non stick cooling rack cool completely. Cut into slices using a serrated bread knife.

Dutch Apple Pie

Filling

7 apples, peeled and sliced
1 C sugar
2 T flour
1 t cinnamon
dash nutmeg, salt

Combine. Pour into crust.

Topping

1 C flour
1/2 C brown sugar
1 cube (or less) butter (not melted)
cinnamon

Cut butter in with a pastry blender. Set topping over apples in pie tin.
Cover with foil for half of baking, so the topping won't burn.
Bake at 350 for 40 min.

Best (lowfat) Oatmeal Chocolate Chip Cookies

1 C flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
2 tbsp butter, room temperature
1/2 cup sugar (or less)
1/2 cup unpacked brown sugar (or less)
1 large egg
1/4 cup unsweetened apple sauce
1/2 tsp vanilla extract
2 cups quick oats

optional: 1/4 t allspice, cloves and ginger

stir in: chocolate chips or raisins, or white chips and craisins and walnuts

Preheat oven to 350°

In a medium bowl, whisk together flour, baking powder, baking soda, salt and cinnamon. In a large bowl, with a mixer, cream together the butter and the sugars on medium speed.  

Add the egg, followed by the applesauce and vanilla extract.

Working by hand, stir in the flour mixture and the oats until just combined and no streaks of flour remain; stir in the chocolate chips.

Drop heaping tablespoonfuls (approx 1 tbsp each) of the dough onto prepared baking sheets, flattening each cookie slightly. Bake for about 10-12 minutes, or until cookies become light brown at the edges. (do not overcook)

Let cool on baking sheet for 3 or 4 minutes, then transfer to a wire rack to cool completely.

Vegan version:  use flax seed for egg substitute, and use mashed bananas or margarine in place of butter



Lowfat chocolate cake

3 C flour        
1 ½ C sugar      
1 t salt         
 2 t baking soda
6 T cocoa        
2 t vanilla          
1/3 C oil        
2 T vinegar
2 1/3 C water             
Mix dry ingredients together. Add wet ingredients and mix well. 350 for 30 minutes.


PEANUT BUTTER FROSTING
 3 oz. soft cream cheese  (or soft butter)       
1/4 C creamy peanut butter
2 C powdered sugar         
2-4 T milk               
1/2 t vanilla

Beat until creamy. Add milk as needed. Sprinkle mini chocolate chips on top of frosting, after frosting the cake.
Vegan frosting:  omit cream cheese and butter.  Use almond milk, stirring until frosting is thick.  Refrigerate frosted cake.

Grandma Shirley's berry dessert

Riley Family Favorite Dessert -


CRUST:
2 C flour                    
1 C chopped walnuts                    
 1 C brown sugar           
1 cube butter (NOT MELTED) -- or less

Press crust into 13”x 9” pan. Bake at 350 for 15 minutes, stirring it every 4 minutes. Reserve ¾ C to sprinkle over the top.

FILLING:
8 oz. package cream cheese, softened                 
1 C powdered sugar                 
1 container of Cool Whip (12 oz?)

Beat until smooth. Layer over COOL crust. Chill in refrigerator before pouring berries on top.

Topping: Stir (approx.) 2 T corn starch and 1/4 sugar into 1/4 C water.  Simmer with one pkg frozen berries, or use  fresh berries.    Cool.

Cherry Bars

Cream together:

1 3/4 C sugar          

1 C butter (I've tried using less but it's never as good)           

1 t vanilla                  

Add 4 eggs.

 Add:      
 
4 C flour             
 
1 1/2 t baking powder                     
 
Spoon 2/3 of batter onto greased jelly roll pan (15" x 10").  Spread one can of cherry pie filling over batter. Top with rest of batter.   Bake at 350 til done. (15 min?)

When cool, top with glaze.             Glaze:  
    
1/2 t almond extract                       
1 C powd. sugar
1-2 T milK
 
This recipe was from Holly Allred in Guam and is Rachel's favorite dessert.

Rice Pudding

2 C milk         
1 1/2 C cooked rice         
1/2 C raisins, optional        
1/3 C sugar       
1 t cinnamon          
 1 t vanilla          
2 eggs

Mix everything together.  Pour into a buttered 9" square glass dish.   Bake at 350 for 30 minutes.  Carefully stir pudding.  Cook an additional 10-20 minutes, until firm enough for your liking.  Serve warm or cold, for breakfast or dessert.

Lowfat pie crust




1 1/3 c. flour            
1/2 tsp. salt           
1/3 c. oil (Puritan, Canola, etc.)             
3 tbsp. skim milk

Combine flour and salt in bowl. Blend oil and milk in bowl. Add to flour mixture. Stir with fork until forms large clumps. Press into ball. Flatten to form 5-6 inch "pancake". Roll between sheets of wax paper. Peel off top sheet. Flip into 9 inch pie pan. Remove other sheet. Press dough into pie plate. Trim and flute.
This recipe really is "easy as pie."  My 11-year-old makes this by himself because he loves apple pie all year long, and I usually only make pies at Thanksgiving (and we eat enough for the whole year that week).

1 t cinnamon
5 T melted butter
