Dutch Apple Pie

Filling

7 apples, peeled and sliced
1 C sugar
2 T flour
1 t cinnamon
dash nutmeg, salt

Combine. Pour into crust.

Topping

1 C flour
1/2 C brown sugar
1 cube (or less) butter (not melted)
cinnamon

Cut butter in with a pastry blender. Set topping over apples in pie tin.
Cover with foil for half of baking, so the topping won't burn.
Bake at 350 for 40 min.

Apple Cake

2 C sugar     
¼ C oil         
1/4 C water            
2 eggs  (or flax seed)          
4 C diced apples   

Combine.

2 C flour        
1 t salt        
 2 t cinnamon         
1 t nutmeg      
2 t baking soda

Combine dry ingredients and add to apple mixture.  Pour into greased 9 x 13 pan.  Bake at 350 for 40 min. or so.



Another good one:
DUTCH APPLE CAKE

1 1/2 C flour            
2 t baking powder            
1/2 t salt              
1/2 C sugar  
              
 1 cube butter, melted ( I substitute part applesauce for lower fat)                    
1/2 C milk                
1 egg

Mix dry ingredients. Mix wet ingredients and add to dry. Stir. Pour in greased 8" square pan.

Lay peeled apple slices (about 5 apples) on top of cake in pan (before baking). Press them down. Sprinkle 1/2 C sugar (+ 1/2 t cinnamon) over it, plus 2 T raisins, if desired. Bake at 400 for 25 minutes.

Crisps and cobblers

5 cored apples, each cut into 8 wedges
           
1/4 cup all-purpose flour                  
1/3 cup rolled oats
1/3 cup firmly packed brown sugar             
3  T cinnamon                  
 1/4 teaspoon ground nutmeg               

1 1/2 T butter (to make this vegan: use Earth Balance fake butter, or applesauce)
4 tablespoons apple juice (or just use lots more butter)

Lay apples in baking dish.  Stir dry ingredients, cut in butter, stir in apple juice.  Sprinkle over top of apples.  Bake at 350 for 15 min or so.  I double the topping and add walnuts.
