Mango Lassi (by AI)

 To make a cafĂ©-style mango lassi using your Nepali spice mix, blend 

1 1/2 cups of frozen mango cubes (or canned mango pulp), 

3/4 cup plain yogurt,  

3/4 cup whole milk, 

1-2 tablespoons of sugar, and 

1/4 teaspoon of your spice mix with 1 cup of ice (or frozen mango) until frothy. Blend Until Smooth: Process on high for 2 to 3 minutes until completely smooth and frothy.

Naan bread

 Ingredients (Makes 4-6 naans)

  • 2 cups all-purpose flour
  • 1 tsp active dry yeast
  • 1 tsp sugar
  • 1/2 tsp salt
  • 2/3 cup warm water (around 105°F–110°F)
  • 2 tbsp melted butter or oil (plus more for brushing)
Instructions
  1. Activate Yeast: Stir the sugar and active dry yeast into the warm water. Let it sit for 5 to 10 minutes until a thick layer of foam forms on top.
  2. Make Dough: Add the flour, salt, and melted butter to the yeast mixture. Stir until a solid dough forms.
  3. Knead & Rest: Knead on a floured surface for 3 to 5 minutes until smooth. Cover the dough bowl with a warm, damp towel and let it rise in a warm spot for 15 to 20 minutes until slightly puffed.
  4. Roll: Divide into 4-6 pieces and roll each into an oval about \(\frac{1}{4}\)-inch thick.
  5. Cook: Heat a cast-iron skillet over high heat. Cook the naan for 1-2 minutes until bubbles flip up, turn over, and cook for another minute. Brush with butter.

Madi's favorite lemon cake

Vegan Lemon Cake:

  • 2 ⅔ cups All Purpose Flour  
  • 1 ½ cups White Granulated Sugar  
  • 1 ½ tsp Baking Soda
  • ¾ tsp Salt
  • 1 ½ cups Milk  
  • ½ cup Canola Oil  
  • 1 Tbsp Distilled White Vinegar or Apple Cider Vinegar
  • 1 tsp Vanilla Extract
  • 3 tsp Lemon Extract
  • 2 Tbsp Lemon Zest

For the Lemon Buttercream Frosting:

  • 4 ½ cups Powdered Sugar  
  • ½ cup  Butter  
  • 2 tsp Lemon Extract
  • 3 ½ Tbsp Lemon Juice 

Pumpkin Chocolate Chip Cookies

My little pumpkin (age 1 1/2) loves these!

1 egg

1 t vanilla

1 1/2 C sugar (or less)

1 C mashed pumpkin

2 T soft butter

1/3 C applesauce OR more pumpkin

2 1/2 C flour (part or all whole wheat flour works great)

1 t baking powder

1 t baking soda

1 t cinnamon

1/4 t salt

1/2 C - 1 C chocolate chips or raisins and/or walnuts

Mix dry ingredients. Mix wet ingredients (I mix the wet ingredients in the blender if my fresh pumpkin is chunky). Mix wet and dry ingredients together. Add chocolate chips. Bake 10 minutes at 350 degrees on an ungreased cookie sheet.

Enchilada Casserole

Homemade Enchilada Sauce {Easy} - Two Peas & Their Pod - Great recipe! I double the recipe, add a quart of home-canned tomatoes in place of the tomato paste and half the broth, and I use a chopped onion in place of the onion powder.

Lowfat biscuits

 3/4 cup low-fat buttermilk (I use powdered buttermilk mixed with water)

1 T canola oil

2 C  flour

1  T sugar

11/2 teaspoons baking powder

1/2 t  baking soda

1/2 teaspoon salt

11/2 tablespoons cold butter, cut in small pieces

Optional: 1 tablespoon low-fat milk, for brushing tops before baking   


    In a large bowl, whisk  dry ingredients.  Cut in butter.  Pour in buttermilk and oil.  Stir til combined.

Transfer the dough to a floured surface and sprinkle with flour. Lightly knead for 30 seconds, then flatten dough and cut out biscuits. Transfer

the biscuits to greased baking sheet.  Bake for 8 to 12 minutes, or until the tops are golden brown. Serve hot.


I use this dough for the top of my chicken pot pie.


General conference cinnamon rolls

 60-minute Cinnamon Rolls         Holly Wonnacott

2 1/3 C warm water

1/3 C sugar

2/3 C oil

4 T yeast


Mix ‘til combined. Let rest 15 minutes. (Use a timer;

The timing must be exact or they don’t turn out as well.)


2 t salt

2 eggs

7 C flour (1/2 wheat is okay)


Add. Mix. Knead, adding flour if too sticky. Let rest 15 minutes.


Preheat oven to 375. Divide dough in half. Roll out for cinnamon rolls;

Spread softened butter over the rectangle of rolled-out dough, then sprinkle

cinnamon and sugar (½ C brown sugar + ¼ C sugar + 2 T cinnamon) over it. Roll up and cut with a piece of dental floss.

Let rise in pans 15 minutes. Bake 15 minutes. Top with glaze made of powdered sugar and milk.

 

For orange rolls use this filling instead of cinnamon and sugar:

Grated rind of one orange

½ C melted butter

1 ½ C sugar

Put this mixture in the fridge until it’s harder and easier to spread.


Cream Cheese Frosting

4 ounces brick-style cream cheese (at room temperature)

2 tablespoons unsalted butter (at room temperature)

1 ¼ cups confectioners' sugar (powdered sugar)

½ teaspoon vanilla extract

small pinch of salt

Sandra's Pumpkin Soup

Sandra Riley's Pumpkin Soup -- My favorite pumpkin soup 

(approximate American measurements added by me)

800g Hokkaido pumpkin  = 4 C
600g carrots = 3 C
2 onions
1L vegetable broth =4 C
0,5L coconut milk  = 2 C
(Ginger and lemon juice if you like, I usually dont have fresh ginger on hand so I leave that out)

I first cut up the carrots, onion and hokkaido and cook them in a feying pan, apparently that releases the flavors haha. I then put them in the vegetable broth and cook them for 30 minutes. I then blend them and put in the coconut milk and season it with salt and pepper.

Salsa

Fresh salsa

3 C chopped tomatoes
1/2 C chopped bell pepper
1 C chopped onion
1/4 C minced cilantro
2 T lime juice
4 t chopped jalapeno (only include the seeds from 2 of them)
1/2 t cumin
1/2 t kosher salt
1/2 t pepper

Stir and serve. (Pour out extra liquid, if desired)

Salsa for canning

5 quarts ripe tomatoes diced -- simmer while chopping the other stuff, then pour off the extra liquid
5 shredded/grated onions
5 jalapenos with seeds
1 C cilantro, chopped
2-3 bell peppers, chopped
1 1/2 C vinegar
6 T lime juice (or lemon juice)
10 cloves garlic, minced
6 t canning salt

Simmer together, put in jars, boil in water bath (with water one inch above the tops of the jars) for 15 minutes. Makes around 7 quarts.

Atwoods' Salsa

30 tomatoes - remove skin and chop tomatoes
4 green peppers, chopped small
2 red peppers, chopped small
5 onions, minced
4 cloves garlic, chopped
10 jalapenos (keep seeds from only 4-5 of these)
1 C + 3 T sugar (or less)
3 T lemon juice
1 C vinegar
1/4 C canning salt

Simmer for 1 hour or so. Process in jars for 25 min. Makes 7 pints.

Sushi

2 C short-grain rice
2 C water
2 T rice vinegar
2 T sugar
1 T salt

Cook rice (use package directions and rinse rice before cooking) in water. Mix cooked rice with the next 3 ingredients. Spread rice 1/4" thick on seaweed sheets. Add carrot (cut into strips, like the shape of pencils) avocado slices, scrambled eggs, pickled ginger, cucumber, tuna, etc. Roll up. Cut in slices.

Zucchini enchiladas

Large pile of shredded zucchini (about 8-10 C?)
2 C cooked cubed chicken (optional)
can of diced chiles
1 chopped onion
garlic
2 C pepper jack cheese, shredded
1 large can (28 oz) Las Palmas green chile enchilada sauce (mild)

Saute onion and zucchini til a little soft. Scoop into tortillas, lay them in a casserole dish (or 2). Pour sauce over them, then top with cheese. Bake at 350 for 15 min.

Fresh pumpkin pie

  •  2 C fresh cooked mashed pumpkin
  • 10 oz. skim milk (based on how much liquid is in the pumpkin - add up to 2 oz more milk if your pumpkin is very dry)
  • 1 T corn starch
  • 3 eggs
  • 3/4 sugar
  • 1/2 t salt
  • 1 t cinnamon
  • 1/2 t ginger
  •  1/4 t nutmeg, cloves 
  • pie crust
  • Mix the pumpkin and milk in the vitamix/blender for a few seconds to avoid a chunky pie. Then add all else to the blender and mix briefly. Pour intopie crust.
  • Bake at 350 for one hour or until not jiggly. It will set up a little while it cools, so don't overcook.
  • If you have more filling than can fit in your pie pan, cook the extra filling in a glass bowl and enjoy it as "pumpkin custard"; it may cook only half as long.

  • 2022 update: here is how I've been altering the above recipe, to use more pumpkin (we grew hundreds)-
  •  2 1/2 - 2 3/4 C fresh cooked pumpkin (or butternut squash or hubbard squash)
  • 1/2 cup or 3/4 cup powdered milk powder (dry powder only--no water)
  •  1/2 C skim milk
  • 1 1/2 T corn starch
  • 3 eggs
  • 3/4 sugar (or closer to 1 cup)
  • 1/2 t salt
  • 1 1/2 t cinnamon
  • a little less than 1/2 t ginger
  •  a little less than 1/4 t nutmeg, cloves
